Gerrit-Jan Smit is a chef, who focuses on the position of young chefs in the transition to a sustainable food chain. As a chef you are an important link between the producer and consumer. The abstraction of the food transition and alienation from our food is something that you can respond to as a chef. For example, the catering industry is a place to relax but also to learn about why we eat and what exactly we eat.
Gerrit was part of the Madagascar Lab&Kitchen and the Asperen Lab&Kitchen in 2019 as chef and artist, investigating local ingredients and techniques.
