Rafa Lombera, a member of the Ejido Boca de Chajul community, has been the local guide to UNAM for the past 20 years. His knowledge on the local biodiversity is immense and his techniques for cooking with the ingredients from the jungle are unique. In this recipe he takes us to his land on the side of the Lacantún River, to cook a salad with herbs and vegetables that grows in his edible forest.
