"Las Caracolas" Learning Community

Asunción Hernández is a farmer passionate about tradition and food production, having worked dedicatedly to preserve ancestral customs and knowledge. Over the years, she has been a prominent producer of corn, a crop with which she makes two emblematic products of the region: nicuatole and tejate. In 2024, she actively joined the agroecology group Las Caracolas, motivated by the need to learn new ways to work the land. She began exploring syntropic agroecology, a practice that aims to recover and maintain soil biodiversity while cultivating vegetables in an environmentally respectful way.
