Pau Ballesteros

Chef

Pau Ballesteros is a Chef from Barcelona experimenting with different recipes to create sustainable and vegan products. He joined the Pilot Project in 2018 during a months stay in the Ejido Boca de Chajul. During his residency he experimented with conserving the precious ingredients grown in the Marqués de Comillas area such as cacao, wild papaya, pacayas and pineapple. He engaged thoroughly with Lucía and Ari, the town’s bakers, in making a sour dough recipe adapted to tropical conditions.
